I've had Shepherd's Pie on my "to make" list for just about - oh forever, and after making some Slow Cooker Rotisserie Chicken, I had a hankering for some Chicken Pot Pie. Well, why not combine the two? And so I did. I chopped up about a pound of our Slow Cooker Rotisserie Chicken while making the bottom crust. I usually like to bake the bottom crust a bit before filling it so it holds up to the moisture better. I also prefer the texture when pre-baked. Then, I just mixed together the chicken, veggies, and gravy and dumped it in the crust. Form your top crust with mashed potatoes, and your Chicken Pot Shepherd's Pie is ready for heating! I made my mashed potato topping pretty smooth, which resulted in less browning. Although it still got cripsy on top, I'd actually recommend leaving a bit of texture to your mashed taters. I also used about three cups of gravy, which resulted in just what James wanted, and it was perfect on a cold winter day. You can see we had quite a bit of gravy though, so please adjust to your preferences.

Methods:
1. Gather all materials. | |
2. Combine onions, mixed vegetables, and chicken. | |
3. Stir in gravy. | |
4. Pour mixture into a pre-baked pie crust. | |
5. Top filling with mashed potatoes. I'd recommend leaving some texture in the potatoes for a better crust. Bake at 400F for 30 minutes. |
