Having grown up in sunny North Carolina, I’ve always been a fan of well-made corn bread, to the point of near-snobby tastes, but the siren call of all things new drew me to territories I once thought scandalous. I had one remaining package of corn muffin mix when I saw this recipe on Budget Bytes, and I knew I had to give it a try. You know me, I'm all about cheap and tasty! Corn breads are comforting treats, but perhaps sprinkling a bit of chaos would bring forth something much more delicious? I decided to proceed forward and employ cheese, corn, and serrano peppers into this recipe and was pleasantly surprised by the results. All the sweetness of corn bread with some help from cheese and peppers to deepen the flavor profile and a bit of texture from corn kernels made these corn biscuits even better!
Serrano Corn Biscuits by Morsels of Life
Warm, textured corn biscuits with a spicy bite, accented with cheese and corn kernels.

Yield: 8 servings
Materials:
- 8.5 ounces corn muffin mix (1 box)
- 2 serrano peppers, diced
- 1/2 cup cheddar cheese, shredded
- 1/2 cup corn kernels
- 1/2 cup milk
- 1 egg
Methods:
- Mix all materials.
- Spoon onto baking tray.
- Bake at 375F until biscuits are golden brown and delicious.
