We had a party where we needed to bring some cookies, but I didn't have a lot of time right before to bake a batch from beginning to end, so I thought about making some where I could let the dough sit refrigerated and then just bake them before leaving. Another bonus is the dough's not complicated to make either - just combine all the materials and then roll the dough in some cinnamon (or skip it if you're in a real rush - works either way). :) Plus, chai! You could also freeze a batch of this dough, and then just bake a few at a time. Sometimes I like doing that for some built in portion control. :) Having the dough sit around for a while also gives the spices some time to mix and meld, giving the cookies even better flavor!

Methods:
- Gather all materials.
- Combine all materials except cinnamon for coating in a food processor, then process until uniform.
- Roll dough into a log, and then coat with cinnamon. (Optional - cover log with plastic wrap and freeze or refrigerate for later use. I'd recommend at least refrigerating for a bit to firm up the dough a bit.)
- Cut dough into quarter inch discs. I found it faster to mark where to cut, and then make the slices all at once.
- Place on baking mat and bake at 350F for 10-15 minutes, until edges begin to turn golden.
