With all the zucchini around lately, we had amassed quite a bit. And eventually, we got tired of eating sauteed or stir fried zucchini. So I decided I'd go for some alternate ways of making a yummy zucchini side. These zucchini cakes do take a bit more time and effort than our usual saute or stir fry. But I'm thinking just about anything - aside from eating raw does too, right? These zucchini cakes aren't too hard either. In fact, they're really easy - just combine all the materials, form into patties, and fry 'em up. I decided to julienne the zucchini because I already had my slicer out. Grating is another option, and the one I'd probably choose next time. (Unless I already have the slicer out - I'm always for fewer things to wash!) I don't think the difference between a julienne cut and grating is as significant in this recipe as it would be for something like Zucchini Fritters.

We really enjoyed the sweetness of the onion and how well it played with the saltiness of the cheese. If you don't have any Cotija around, Parmesan or Romano make good substitutes. :)

  1. Gather all materials.
  2. Combine all materials, mix until homogeneous, and form into patties.
  3. Pan fry zucchini cakes until browned, and then flip and brown on other side.

  3. These sound and look amazingly delicious! They're so perfectly crisped! Frying is definitely not one of my strong points. (Well, I guess cooking in general isn't one of my strong points:-) When I've fried food in the past, parts of it get too dark, while other parts don't get dark enough! But that's why I'm all signed up on your blog. I'm bound and determined to get better as well as more creative with my cooking! Thank you so much for this awesome recipe!     1. They are totally yummers! And easy to make too. :) If you can't find Cotija cheese, you could also use Parmesan or Romano instead. It won't taste the same, but it'll still be yummy. :)
