DeleteI've never tried Cotija cheese however I do love corn. Thanks for sharing this recipe with us at #anythinggoes link up and have a great week!
ReplyDeleteThanks! The saltiness of the Cotija really adds something to this corn salad. Hope you enjoy it. :)
DeleteI don't think that I've had Cotija cheese before. The recipe looks good ~ pinned so I can try it out.
ReplyDeleteYay! Let me know what you think once you give it a try. :)
DeleteI love quick and easy dishes like this! Though I have never heard of that type of cheese. Pinned.
ReplyDeleteYou and me both, especially when there's 3 kiddos to take care of! :) They usually have it on the side of the regular cheese section, but if you can't find it, something like Parmesan or Feta or a mix would work.
DeleteLovely recipe, just like "esquites" in Mexico, yummy!
ReplyDeleteNever heard of that one. I'll have to check it out. :)
DeleteI'm running behind!! Thanks so much for sharing at the What's for Dinner party last week. Hope to see you there this week too!! Enjoy the rest of the weekend.

Thanks for the feature! Hope your summer is wonderful so far. :)
DeleteThis is an intriguing recipe to me. Fresh corn salad appeals to me, but I, also, have never heard of that type of cheese. I think we could try a vegan feta substitute.
ReplyDeleteI appreciate you sharing this at the Homestead Blog Hop!
Blessings,
Laurie
That sounds like an interesting substitution! Let me know how it works out if you give it a try. :)
