I'd bought some cashew milk, and we needed to find a delicious (or at least tolerable) way to use it. I thought back to the caramelized banana bread I'd made many moons ago, and wondered if the power of caramelized bananas could transform the cashew milk. (The ripe bananas sitting on the counter also contributed to my thought process.) Well, it turns out, the answer is a definite yes! This caramelized banana ice cream does take a bit longer than your usual ice cream since you're caramelizing the bananas, mixing everything together, and cooling before freezing. If you don't happen to have some cashew milk lying around, I'm betting you'd get an even yummier, creamier bowl of ice cream if you used cream instead.

Materials:

2 tablespoons brown butter
475 grams 16.75 ounces 4 bananas
78 grams 2.75 ounces 1/2 cup brown sugar
512 grams 18.125 ounces 2 cups milk I used cashew milk.
1 tablespoon vanilla extract

Methods:

  1. Gather all materials.
  2. Cut bananas in half, lengthwise. Melt brown butter in a pan, and place sliced bananas into pan, cut side down. Add in brown sugar.
  3. Whisk into homogeneous mixture as bananas begin to fall apart.
  4. Mix in milk and vanilla. Refrigerate mixture.
  5. Freeze, following ice cream maker instructions.
