I've made various Pumpkin Quick Breads and Pumpkin Spice Muffins before. Now, I decided it was time for a yeast bread. I had some roasted pumpkin puree in the freezer, but I'm thinking canned pumpkin would also work. Not so sure about pumpkin pie filling though. (Anyone tried with pumpkin pie filling? Does it work?) The pumpkin flavor in this yeast bread was quite a bit more subtle, likely because there's a lot less pumpkin. Maybe I'll make another version with more pumpkin next time. However, with the lighter pumpkin flavor, this bread works works perfectly with the Maple Spiced Pumpkin Butter.

Have you ever tried making pumpkin bread with pumpkin pie filling? Does it work?

Materials:

510 grams 4.25 cups flour I used a mix of whole wheat and white.
2 teaspoons yeast
1 cup pumpkin puree I pureed some roasted pumpkin.
3/4 cup milk
1/4 cup butter
1 egg
1/4 cup brown sugar

  6. Sometimes I just make too large a batch of puree to use all at once, so it's good to be able to just freeze and use later. :)
