Anyone who's around here much knows we're fans of guacamole, all sorts of guacamole! So when I saw this recipe on Bev Cooks, I knew we'd have to give it a try, especially since we like Cajun shrimp too! Initially, I wasn't sure about the guacamole since it didn't have any spices/herbs or tomatoes, which we like to include in our guacamoles. However, once you add in the shrimp, this guacamole really hits the mark! In fact, part way through, I actually went back and cut the shrimp into bite sized pieces and mixed it completely into the guacamole. It's what I'd recommend if you make this Cajun Shrimp Guacamole.

Materials:

2 tablespoons butter
1/2 tablespoon Cajun Seasoning
1/2 pound shrimp, peeled and cleaned
2 avocados
82 grams 1/2 pound 1/2 cup 1 bell pepper, chopped
2 tablespoons green onions, sliced
39 grams 1/4 cup onion, diced
1 tablespoon lime juice

Methods:

  1. Gather all materials.
  2. Melt butter, and place Cajun seasoning in pan.
  3. Cook shrimp in buttery Cajun seasoning.
  4. Stir together remaining materials. Mix shrimp into guacamole or just serve on top. Either way, it's tasty. :)
