Quick and simple corn fritters made with whole wheat.
It's time for SRC again! Each month, we're paired with another blogger, and we get to select a recipe from their blog to make. This month, I got A Spoonful of Thyme. Lots of options! I was going between Vermont cheddar bread, beef stroganoff, and the devils on horseback when I finally selected Corn Fritters. I thought back to the Zucchini Fritters I'd made before, and we had a few pounds of corn to use. My version of these corn fritters are a bit different from the original. I used frozen (thawed) corn, whole wheat flour, no jalapeno, and kept the corn as whole kernels. Cajun seasoning would be great on these fritters too! Try them and see what you think. :)

You were my partner this month and I loved the eggplant in garlic sauce as well as many other recipes I'll be trying. you have a great blog. I'm glad to be introduced to it..
ReplyDeleteI love corn frittiers. Actually, I love fritters so I think this was a great choice to make.
ReplyDeleteThese sound so good and fun to make. Would be a great little appetizer for the holidays.
ReplyDeleteMy daughter will be pleased that you selected one of her recipes from the blog! They were delicious and I like your idea of using whole kernels.....it would be hard for me to give up the jalapeno but the Cajun seasoning sounds like a great idea so I just might have to do it! Great SRC selection.
ReplyDeleteI absolutely love corn fritters! They're so great and I indulge by dipping them in maple syrup. Great SRC choice!
ReplyDeleteI love corn fritters but hardly ever make them as my husband can't stand corn. By chance he's away this week and so this is going to be another meal for me and my daughter! I always try to make things he doesn't like when he's not there.
ReplyDeleteMy favorite type of fritter is apple! I've never tried corn fritters - they sound really fun. I'd have to add the jalepenos for my husband - he loves them in everything. :)
ReplyDeleteI'm so glad to hear you liked the eggplant in garlic sauce! We like it a bit spicy around here. :P Hope you find many other enjoyable recipes. :)
ReplyDeleteWe liked them here too! The sweetness just goes so well. :)
ReplyDeleteIt certainly would! Let me know what you think if you get to give it a try. :)
ReplyDeleteYour daughter should be proud of her recipe! We liked the extra texture of the whole kernels. However, I liked how much fluffier yours were with the puree. Maybe with creamed corn next time? :)
ReplyDeleteOoo - I'd only thought about savory dips, but maple syrup sounds like a scrumptious choice! :)
ReplyDeleteMaking things he doesn't like when he's not around sounds like a great idea. :) You can enjoy what you want, and he can't complain! :P Hope you enjoy these fritters!
ReplyDeleteHmm - apple fritters sound good, although I've never had any before. I'm thinking maybe with a bit of cinnamon and brown sugar? :)
ReplyDeleteMy sister and I had conch fritters on a spring break trip to Florida many moons ago. I don't know if they are my favorite, but I say they are simply because it was such a good memory. Your corn fritters look pretty good too!
ReplyDeleteYum! I can almost taste these versatile little bites with some chilis and smokey paprika mixed in for a SW twist. Great SRC choice.
ReplyDeleteSometimes the best foods are the ones with the best memories! :)
ReplyDeleteSounds like a nice twist! I'll have to give it a try next time. :)
ReplyDeleteI love corn fritters and I like that you left the whole kernels of corn in the fritters! Great SRC choice!
ReplyDeleteThe kernels gave the fritters a nice texture. :) Hope you enjoy these fritters!
