After visiting my parents, we ended up going home with a pumpkin. Isn't it interesting how you sometimes get sent home with something unexpected? Apparently, the school gave my mom a pumpkin, and she couldn't get anyone else at school to take it. She also didn't really know what to do with a pumpkin. So we got suckered into taking it. Initially, James wasn't so happy about it, but after tasting this pumpkin bread, he sang a new tune! I'd never really worked with pumpkin before (except once, a long time ago - actually the first post on this blog!), so I figured I'd start with something pretty easy. In fact, I simply took a banana bread recipe and tweaked it for pumpkin.

Materials:

2 cups flour I used half whole wheat and half white.
1 teaspoon ginger, powdered
1/2 teaspoon nutmeg, grated

1/2 teaspoon salt
3 cups pumpkin, puréed
1/2 cup sugar
1/4 cup oil I used butter.
1 teaspoon vanilla
1/2 cup walnuts, chopped
