After visiting my parents, we ended up going home with a pumpkin. Isn't it interesting how you sometimes get sent home with something unexpected? Apparently, the school gave my mom a pumpkin, and she couldn't get anyone else at school to take it. She also didn't really know what to do with a pumpkin. So we got suckered into taking it. Initially, James wasn't so happy about it, but after tasting this pumpkin bread, he sang a new tune! I'd never really worked with pumpkin before (except once, a long time ago - actually the first post on this blog!), so I figured I'd start with something pretty easy. In fact, I simply took a banana bread recipe and tweaked it for pumpkin.

Pumpkin Spice Muffins

Materials:

1/2 cup | sugar | ||||
1/4 cup | oil | I used butter. | |||
1 teaspoon | vanilla | ||||
1/2 cup | walnuts, chopped |
Methods:
1. Gather all materials. | |
2. Form Wet Team by mixing eggs, pumpkin, oil, sugar, and walnuts. | |
3. Form Dry Team by combining flour, baking soda, baking powder, salt, and spices. | |
4. Combine Wet Team and Dry Team. | |
5. Pour batter into muffin tins and bake at 350F for 15 minutes. | |
6. Or use a loaf pan! (Bake for 55 minutes.) |
