Feta cheese topped balsamic marinated salmon on a bed of roasted peppers and tomatoes.
After returning from a trip, I wanted a quick and easy dish. I knew I wanted some sort of seafood, and I happened to have salmon available, so salmon it was! I also had one lonely bell pepper and a handful of grape tomatoes. I roasted the bell pepper for some additional flavor, and you could also roast your tomatoes (or use sun dried tomatoes). Unfortunately, I didn't think of roasting the tomatoes until now. Oh well - next time! I also like the sweet tang of balsamic vinegar, so I threw some in for just a hint of additional flavor. Sprinkle on some Italian Dressing Seasoning or even Italian Seasoning and you're good to go!

Feta Topped Salmon

Materials:

1 teaspoon | Italian Dressing Seasoning | ||||
4 ounces | tomatoes, diced | ||||

1 ounce | feta cheese, crumbled |
Methods:
- Gather all materials.
- Pour vinegar over salmon, and make sure it's all covered.
- Sprinkle Italian Dressing Seasoning on top.
- Combine tomatoes and roasted pepper and put in an oven safe container.
- Top mixture with salmon, then sprinkle feta on top. Bake at 350F for about 20 minutes, until fish flakes.
