I've seen jicama at the grocery store a bunch of times, and I've never tried it. So last time I saw jicama on sale, I just decided to buy one and figure it out. Can't be too hard, especially with so many recipes online, right? Jicama's full of fiber, vitamins A, B, and C, as well as calcium, phosphorus, and inulin, a prebiotic. I noticed it was pretty crunchy, so why not go for some sort of jicama slaw or salad? We had some dried cranberries and walnuts around, so I used those two. Plus, our favorite cole slaw in the series I just finished up was the Cranberry Walnut Cole Slaw. I still wanted to add some color and flavor, so I cut up an apple and threw it into the mix as well. Next time, I'm thinking some carrots, broccoli slaw, or other additions might be fun.

Yum! This looks like a delicious way to eat Jicama. Jicama is one food that I rarely see at the store, mostly because I'm not looking for it! Although I usually associate it with Mexican food. Not sure why. Thanks for posting on the #wastelesswednesday blog hop!
