As I finish up this series on various cole slaws, I thought back to the Carrot Craisin Salad I'd made previously. Plus, James and I both like dried cranberries. :) And since the dried cranberries add in a bit of texture, you can add even more with some chopped walnuts.
Speaking of which, coffee grinders - perfect for quickly chopping up nuts. Quick and easy with less cleanup than by hand or with a food processor. Tell me I'm not the last to find out! In fact, coffee grinders are great for all sorts of things - making bread crumbs, grinding spices, etc. I don't think I've ever even used this coffee grinder for coffee!
Anyway, back to this Cranberry Walnut Cole Slaw. This cole slaw was definitely one of my top 2, if not my favorite. Give it a try and see if you agree.
