As we continue this series on cole slaw, I thought I'd go for an "Asian" cole slaw - Southeast Asian, specifically - peanuts, ginger, soy sauce, lime. These flavors combined, making a cole slaw with memories of Thailand. The soy sauce serving as a savory base, ginger as a bit of a flavor brightener and kick, lime providing a bit of tangy lightness, and of course, peanuts, almost a signature flavor/topping on the many foods we ate in Thailand. They also add a nice crunchy change in texture to the slaw.
