After seeing this recipe from Trader Joe's Recipes, I knew I just had to make them! I don't go to Taco Bell often (likely a good thing!), but I did order this Mexican pizza just to compare. I'm not really sure why - usually I just get disappointed with my order. But then, how's a restaurant, and fast food at that, to compare with homemade? Not only were these "Mexican" pizzas tasty, they were fairly easy to make too. You just spread some refried beans and taco meat on one tortilla, and some cheese and taco toppings on the other. Stack the two tortillas, and you're ready to satisfy your craving!

Materials:

Mass Weight Volume Number Material Notes
2 tortillas
3 tablespoons cheese, shredded
2 tablespoons ground beef
3 tablespoons refried beans
2 tablespoons olives, sliced
1/2 teaspoon green onions, sliced
1 tablespoon tomatoes, diced
other taco toppings (avocado, guacamole, sour cream, etc.) as desired

Methods:

  1. Gather all materials.
  2. Place tortillas on a baking tray.
  3. Top half the tortillas with cheese, olives, tomatoes, etc. (Not refried beans and meat.)
  4. Spray other half of tortillas with a bit of oil. (I used a Misto.)
  5. Bake at 350F for ~10 minutes, until tortillas crisp and cheese melts.
  6. Spread refried beans over tortillas without cheese and toppings.
  7. Top refried beans with taco meat.
  8. Stack tortilla with toppings and cheese on top of tortilla with refried beans and meat.
  9. Sprinkle green onions (and any other desired toppings) on top.

  11. Yeah, the Taco Bell title of Mexican may be a little generous, but the idea is pretty delicious!

    I’d much rather eat a fresh Mexican pizza made with quality ingredients than a mass-made wonder!
