Those of you who know me know I'm a fan of Mexican foods. I especially like the Cilantro Lime Rice they have at places like Chipotle, so when I saw this recipe on Loving My Domestic Life, I knew I had to give it a try (featured on Five Friday Finds). Why hadn't I thought of it before? This recipe is about as easy as it sounds - cilantro, lime, and rice. The cilantro flavors up the rice pleasantly, and the lime just brightens everything. I served this rice with tacos and refried beans, and you could easily use it in a burrito, enchilada, or even just by itself. It's that good!
