After making some DIY Taco Seasoning, I had to put it to use! I also wanted to use some of the beef I ground. (Let me tell you - so much better than store bought ground beef!) However, I wanted something more creative than your usual tacos. I also had some star baking molds I wanted to use. So, how do I combine all these desires into one meal? Taco muffins! The ones I made in a muffin tin looked kinda like bran muffins, but my favorites? These star shaped ones. :) Something about stars just appeals to me. (Do you see the other stars on this site?) These Taco Muffins are a bit like the taco version of these breakfast muffins, but you can eat them anytime - breakfast, lunch, dinner, snack, whenever! Just mix all the materials, bake, and then you're ready to gobble!

- Stir all materials together.
- Pour into greased muffin tin.
- Bake at 350F for 30 minutes or until done.
