We usually eat (or at least try to eat) seafood on Saturdays. We're also usually low on groceries since we get those on Sunday. (And now you know another reason I share simple seafood recipes. :P) With the warmer weather, I wanted something light, tasty, and refreshing. And I needed to have everything on hand already. Looking around, I found some last bits of collard greens (kale works well too) and not too much else. I wanted some sort of pasta since we hadn't had any in a while, and I just kinda went from there. Cook up the greens, pasta, and fish, then mix it all together. I threw in some garlic with the collard greens out of habit and cooked the fish up with a bit of lime. (No lemons on hand.) After combining all the components, you can "fancy" it up a bit with some capers and grated Parm (or shaker Parm depending on what you've got on hand).

Materials:

Mass Weight Volume Number Material Notes
2 cloves garlic, minced
1 bunch greens, chopped I used collards, but most greens should work well.
1 tablespoon lime juice or lemon juice. I just prefer the flavor of lime.
2 tilapia fillets about 4 ounces each
1/4 cup Parmesan cheese, grated
2 tablespoons capers, drained
3-4 ounces 2 servings pasta I used a combo of gemelli and cavatappi.

Methods:

  1. Gather all materials.
  2. Cook pasta following package directions.
  3. Heat garlic in a bit of oil until fragrant.
  4. Add in greens, and cook until slightly wilted.
  5. Meanwhile, cook fish. I just greased a pan and cooked up the fish with a bit of pepper. Grilling is another nice option.
  6. Mix cooked greens and pasta, and then top with tilapia (or mix in like we did).
  7. Drizzle with lemon or lime juice, sprinkle on a bit of Parmesan, and then top with capers.

  1. Looks good. I'd leave the fish out--I'm a vegetarian--but it should still work.

    1. It's such an easy dish to get out on the table. At it's heart, it is just pasta and greens. Then I just threw in some fish for added protein. :)

    That looks such a delicious recipe. I hope you enjoyed it. Do you think it would work with mushrooms instead of the tilapia as we are vegetarians and do not eat fish?

    1. I think that would work, although I have not tried it. Obviously, it would have a different flavor, but I think it would still be tasty! In fact, I'm thinking maybe I should try it now. :) Let me know what you think once you give it a try!

    1. You know I'm all about easy to make. :) Hope you like it! You could also substitute some other seafood in if that's easier - some sort of thin, white fish or shrimp would likely do well.
