A quick and easy peach cobbler - perfect for a quick dessert (or anytime).
We'd gotten some peaches recently, and I wanted a quick, easy, and tasty way to eat them. Thinking back to the Quick Apple Crisp, I knew exactly what I wanted to make. This quick peach cobbler perfectly suits the mealtime rush, taking less than 15 minutes to make. It's also much easier to make just the desired amount since you make the peaches and topping separately. You could even use the peaches as pie filling if you made too much. We like to just pile it on - after all, fruit's healthy, right? Speaking of which, this dessert really is healthy - toasted oatmeal and almonds over fruit. (At least that's what I tell myself as I go for another serving!)
