I first saw these Dátiles con Tocino at La Tasca, when someone else at the table ordered them. I wasn't sure if these Blue Cheese Stuffed Dates Wrapped in Bacon were any good. I mean, I'm sure they're delicious, being bacon wrapped and all. But I'm just not a fan of blue cheese, and it's ruined many a tasty dish for me. But, for some reason, I kept thinking about this dish and how the person who ordered it kept commenting about how tasty and delicious and awesome these Datiles con Tocino were. After checking with James about the blue cheese, I decided to make these tasty morsels. As luck would have it, we had dates and bacon on hand. I just needed some blue cheese. Fortunately for me, blue cheese happened to be on sale. Armed with all the necessities, I went forward and made these Datiles con Tocino. I am definitely glad I did! Three simple materials combined, forming something far greater than each individual material! (And I don't even like blue cheese, but somehow the sweet dates and smoky bacon transformed it!)

Materials:

Mass Weight Volume Number Material Notes
15 dates, pitted I used Medjool dates.
blue cheese, crumbled
5 slices bacon, cut into thirds

Methods:

  1. Gather all materials.
  2. Stuff dates with blue cheese. As I stuffed the dates, I found it easier to tear the date on one side and then roll it around the cheese, but that's probably because I tried to overstuff the dates.
  3. Wrap each stuffed date with bacon. I sliced each piece of bacon into three pieces, and each piece was just the right size to wrap around the dates. You can also further secure the bacon with a skewer or toothpick, but I was either too lazy or too efficient to do that. :P
  4. Bake at 400F until the bacon crisps up a bit and the cheese gets melty.
