Eggs are a versatile and ever-present member of the classic American breakfast. Whether scrambled, fried, over-easy, or hard-boiled, they're flavorful, filling, and fun to make. Not many would find making eggs excruciatingly difficult; even James, who's likely to burn water when in the kitchen, manages to whip up some eggs in a reasonable amount of time. But that shouldn't stop anyone from toying with the possibility of cooking it in even less time! I'm thinking about the morning rush - where every little extra bit of time (or sleep) counts! If you enjoy your eggs scrambled, this recipe can be an enjoyable, swift alternative; and if you take them in any form, this method will be the ultimate time-saver. All you need are eggs, but you can throw in some of your own favorite ingredients or twists to really personalize this dish. I threw in some Garlic Parsley Butter and basil parsley ricotta cheese, but you could easily edit depending on your preferences and availability. All you need are eggs, a microwave-safe cup, and a microwave, and you're on your way to a speedy breakfast!
Egg in a Cup by Morsels of Life
Quick and easy - hot, fluffy eggs with flexibility only limited by your imagination.
Prep time: 1 minutes
Cook time: 1 minutes
Total time: 2 minutes
Yield: 1 serving
Materials:
- 2 eggs
- 1 tablespoon ricotta cheese (I mixed some parsley and basil into mine.)
- Garlic Parsley Butter
Methods:
- Spray interior of cup with small amount of oil. I used a handy dandy Misto.
- Beat eggs.
- Microwave eggs for 30 seconds, and stir. Then microwave eggs for an additional 30 seconds.
- Top with your choice of toppings. I used ricotta cheese with parsley and basil and Garlic Parsley Butter. I put the toppings on at the end, but you could also incorporate your additions when stirring after the first 30 second microwaving session.
