I’m sure more than one of us has had the kind of teacher or admired mentor who abides by this one phrase, “Keep it simple, stupid.” Mine was a brilliant Ph.D. chemistry instructor in high school, a no-nonsense, straight-talking woman with a sonorous Southern accent. She was a cross between Judge Judy and your sweet, old Baptist grandma. I often find myself attempting elaborate and complex recipes, as if it increased culinary street cred or affirmed some level of mastery in the kitchen, but from time to time, I recall my chemistry teacher with arms crossed saying, “Keep it simple, stupid.” In that same spirit, I decided to tackle this chicken with something easy and tasty. You can't get much more simple than two ingredients (both of which are in the name)! :P
Catalina Chicken by Morsels of Life
A simple chicken dish with the sweet tanginess of Catalina dressing.
Prep time: 5 minutes
Cook time: 14 minutes
Total time: 15 minutes
Yield: 2 servings
Methods:
- (optional) Marinate chicken. I tried it both with and without marinating, and you could taste a difference, but it was good either way. Another option (my preferred method) is to freeze the chicken in a bag with the Catalina Dressing - less planning/thinking ahead required - just take it out and cook when you want!
- Bake at 425F until cooked through and skin crispy.
- Remember that simple can be tasty too!
I have a very similar chicken recipe using dressing, but what a good idea to actually freeze when I am putting away the groceries all ready for when I want it. Thanks, gonna try and see.
