I had been thinking about galettes, but I was making breakfast, and I had biscuits around, so I thought I would take the idea of a galette, but modify it to use what I had on hand. Instead of some sort of dough on the outside, I used an egg, but then, I put the dough on the inside as a biscuit! I used a cheddar garlic biscuit, but you could replace it with any kind of biscuit - sweet or savory. Another idea might be to fill or spread some jam or jelly on a plain biscuit or English muffin and use that for the filling. The possibilities are virtually unlimited! This breakfast was fun to eat as well, since it's not necessarily what might be expected when you start with an egg and a biscuit. In addition, it was quite tasty, especially with the cheddar garlic biscuit. They went together quite well - the savory, slightly garlicky flavor of the biscuit perfectly complemented the egg.

Methods:

  1. Grease pan and pour egg into pan, allowing the bottom to cook. While the top is still liquidy, place a biscuit into the center of the egg.
  2. Fold egg up using hands/spatula.
