Oatmeal Pancakes with Banana and Walnuts

One thing I like about Saturday mornings is having a longer time for breakfast (or brunch, depending on when we get up). That extra time allows us to make something slightly more complex than oatmeal, our weekday standard. :) Although this breakfast isn't too much more complex than oatmeal, especially if you already have instant flour mix, it does provide a bit of variety. If you don't have any instant flour mix, it'll only take a minute more! In addition, it incorporates walnuts, which contain omega-3 fatty acids, with their many health benefits, and bananas, which also have their own health benefits. I opted to make plain pancakes and then top with walnuts and bananas, and then pour maple syrup on top this time, but I think next time, I would go ahead and mix in the walnuts and potentially the banana with the batter. However, keeping them separate until you're about to eat them allows for the most flexibility, which is good if you've got picky eaters. It might also be fun to allow everyone to top their own pancakes and use as much (or little) as they'd like. With these tasty (and healthy) pancakes, breakfast is sure to be a hit! You could even make more and freeze them for later (if they don't get eaten first).

Materials:

Mass Weight Volume Number Material Notes
2 cups instant flour mix Or Bisquick
1/2 cup oatmeal
1.25 cups milk
2 eggs
bananas, sliced
walnuts, chopped
maple syrup


Methods:

  1. Combine instant flour mix, oats, milk, and eggs and mix until homogeneous.
  2. Pour 1/4 cup batter onto heated and greased pan. When edges are done, flip over and cook on other side until golden brown.
  3. Serve with walnuts, bananas, and syrup.

    >hmm - I'm not sure. I've never had almond milk, but I know water would also work, so I'm guessing it would work, but might taste different?
