I had a few tomatoes and green peppers sitting around, so I thought I could combine those into some sort of dip or stuffing. After making the stuffing for baked stuffed tomatoes, I found I had more stuffing than I could fit into the tomatoes. Looking at the stuffing, I thought it would make a good dip with some additional tweaks. I also liked the additional flavor that the pepper jack cheese provided. With the red and green, this would be an easy to make dip for Christmas! I also added a bit of bacon for additional flavor. You can't go too far wrong with bacon! This dip was very tasty, and it can easily be scaled up or down for parties or other gatherings.

Baked Tomato Dip

Materials:

Methods:
- Mix all materials.
- Bake at 350F until cheese is melted throughout.
- Sprinkle additional cheese on top if desired.
