Since I had some extra tomatoes and green peppers, I thought I'd look for some recipes that used both. When I found this recipe, I figured I'd give it a try (with the usual edits, of course). However, after making the edits, I found that I had more than enough stuffing, and I made some baked tomato dip as well. Don't you just love those recipes that can so easily be made into something else? The stuffed tomatoes would make a fun and colorful appetizer, side, or snack! It's also easy enough to make for a small crowd.

Baked Stuffed Tomatoes

Materials:

1/4 cup | bread crumbs | ||||
1/3 cup | cheese, grated | I used pepper jack. |
Methods:
- Slice off stem ends of tomatoes, and scoop out insides, leaving outer shell intact.
- Dice tomato pulp.
- Add all other materials aside from tomato shells to tomato pulp and mix.
- Stuff mixture into each tomato shell. Top with additional cheese/bacon bits/seasonings if desired.
- Bake at 350F until heated through and cheese is melted, approximately 25 minutes.
