
This week’s been pretty busy trying to get some data for meetings, including a 12+ hour workday. I’m just glad it’s the weekend now. I almost can’t believe Thanksgiving is next week! We’re hosting for the first time this year (both families in one small apartment through the weekend), and I hope all goes well. This weekend, we’ll also likely be finalizing Thanksgiving plans – I’m thinking roast duck, pulled pork, and some sort of seafood for dinners. Not the most traditional, but it works for us. I’ve never made a whole turkey, and we never had a turkey for Thanksgiving growing up, so I didn’t feel a need to start this year. :)

We’re certainly fans of biscuits around here, and I think this version is a tasty variant. They’d go well with Thanksgiving too!

I have some raspberry cream cheese, and I think this cream cheese stuffed French toast might be showing up at breakfast soon!

Old-Fashioned Soft Pumpkin Cookies – The Encouraging Home
With pumpkins all around, why not make some cookies? If you’re not such a fan of pumpkin, sweet potatoes substitute quite well!

Baked Brie Dip – White on Rice Couple
Doesn’t this dip look so tasty? Lucky for me, James just got a pound of Brie. Maybe we’ll have this as a snack or appetizer when everyone’s over next weekend!

Vietnamese Chicken Pho – Junglefrog Cooking
Pho – one of my favorite noodle soups! This one starts with stock, so it doesn’t take as long to make. I’ll have to give it a try once I make some stock!
